Ingredients:
- 300 g risotto rice
- 200 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 1 l vegetable broth
- 100 ml white wine
- 50 g butter
- 50 g Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic. Slice the mushrooms.
2. Heat the butter in a large skillet over medium heat. Add the onion and garlic, sauté for about 5 minutes until they are soft.
3. Add the mushrooms and cook for another 5-7 minutes until the mushrooms are tender.
4. Add the risotto rice and stir well, cooking for about 2 minutes.
5. Pour in the white wine and let it evaporate until it is almost absorbed by the rice.
6. Gradually add the vegetable broth one ladle at a time, stirring and allowing the liquid to be almost absorbed before adding the next ladle. Continue until the rice is al dente, about 18-20 minutes.
7. Remove the pot from the heat and stir in the grated Parmesan cheese. Season with salt and pepper.
8. Serve immediately, garnished with fresh parsley.
