Ingredients:

- 1 onion, finely chopped
- 2 small garlic cloves, grated
- 2 tablespoons butter
- 1 3/4 cups risotto rice
- 7 cups boiling vegetable broth
- 200 g brown mushrooms, chopped
- A knob of butter
- Black pepper and salt to taste
- 70 g sweet chili Philadelphia cream cheese
- Grated Parmesan cheese for topping
- Arugula (optional)

Instructions:

1. Sauté the chopped onion and grated garlic in hot butter in a pot.
2. Add the risotto rice and sauté for a short while.
3. Gradually add the boiling vegetable broth, stirring until the rice is cooked.
4. Sauté the mushrooms in butter, seasoning with black pepper and salt. Add the mushrooms to the risotto.
5. Finally, stir in the sweet chili cream cheese until melted and evenly mixed.
6. Serve the risotto on plates, topping with grated Parmesan. Optionally, serve with arugula.
