Ingredients:
- 2 eggs - 1 avocado
- 2 slices of whole grain bread
- 1 tomato
- 1/2 cup fresh herbs (e.g., basil or parsley)
- Salt and pepper to taste
- Olive oil for frying
Instructions:
1. Heat olive oil in a frying pan over medium heat. 2. Crack the eggs into the pan and fry them to your desired level of doneness. Season with salt and pepper.
3. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado and season with salt and pepper.
4. Toast the whole grain bread slices until golden brown.
5. Slice the tomato and place it on top of the toasted bread.
6. Spread the mashed avocado over the tomato slices.
7. Place the fried eggs on top of the avocado and sprinkle with fresh herbs to finish.
