Peach Pastries with Pistachios

Easy and quick peach pastries topped with crunchy pistachios, perfect for dessert or coffee breaks. Preparation Time: 30 minutes

Ingredients:
- 2 sheets of puff pastry - 3-4 peaches or nectarines
- A handful of pistachios
- 2-3 tablespoons of sugar
- 1 egg (for egg wash)
- Powdered sugar (for finishing)
Instructions:
1. Remove the puff pastry from the freezer and allow it to thaw according to package instructions. 2. Wash and dry the peaches or nectarines thoroughly. Cut them in half and slice.
3. Cut the puff pastry sheets into two equal parts and place them on a baking sheet lined with parchment paper.
4. Crack the egg into a bowl and whisk lightly. Brush the edges of the puff pastry with the egg wash.
5. Arrange the peach slices closely on top of the pastry and sprinkle sugar over them.
6. Coarsely chop the pistachios and sprinkle them over the peaches.
7. Bake the pastries at 225°C (437°F) for about 15-20 minutes, until the puff pastry is crispy and golden brown.
8. Allow to cool slightly before serving, and dust with powdered sugar.
