A summer delight that is perfect for dessert or a coffee table treat. Preparation Time: 1 hour 30 minutes
Serving Size: 8 servings
Ingredients:
- 150 g butter
- 3 1/2 dl all-purpose flour
- 1/4 dl cold water
Filling:
- 5 ripe peaches, halved
- 2 eggs
- 1 dl granulated sugar
- 1 tsp vanilla sugar
- Zest of 1/2 lemon
- 2 dl sour cream
Instructions:
1. Preheat the oven to 225°C (437°F).
2. Mix the butter and flour until crumbly. Add the cold water and quickly mix into a smooth dough.
3. Wrap the dough in plastic wrap and refrigerate for 1 hour.
4. Roll out the dough and line a pie dish. Prick the bottom with a fork and cover the edges with strips of foil.
5. Pre-bake the crust in the center of the oven for 10 minutes. Remove from the oven and take off the foil.
6. Arrange the peach halves in the bottom of the crust.
7. In a bowl, whisk together the eggs, granulated sugar, vanilla sugar, lemon zest, and sour cream. Pour the mixture over the peaches in the pie dish.
8. Bake until set at 200°C (392°F) for about 15-20 minutes.
