Ingredients:
- 6 eggs - 3 cups shredded coconut
- 3 cups semolina
- 3 cups plain yogurt
- 3 cups sugar
- 1 cup oil
- 2 cups fresh or canned peaches (diced)
Instructions:
1. Preheat the oven to 180°C (350°F). 2. In a bowl, whisk the eggs and sugar together until light and fluffy.
3. Add the oil and yogurt, and mix until smooth.
4. Stir in the shredded coconut and semolina, mixing well until all ingredients are combined.
5. Gently fold in the diced peaches into the batter.
6. Pour the batter into a greased baking dish.
7. Bake in the oven for about 30-40 minutes, until the top is beautifully golden brown.
8. Allow to cool before serving.
