A delectable Finnish blueberry pie made with a soft sweet dough, perfect for dessert or a cozy afternoon treat. Preparation Time: 2 hours
Serving Size: 8-10 servings
Ingredients:
- 2 dl lukewarm milk
- 25 g fresh yeast
- 2 tsp cardamom
- 0.5 tsp salt
- 1 egg
- 1 dl sugar
- 1 dl melted baking margarine (e.g., Oivariini)
- 450 g all-purpose flour
- 800-1000 g blueberries (frozen)
- 1.5 dl sugar (for filling)
- 0.5 dl potato starch
- 1 tsp grated lime zest
- 1 egg (for brushing)
- 1 tbsp water
Instructions:
1. Dissolve the yeast in lukewarm milk.
2. Whisk in the egg, salt, cardamom, and sugar.
3. Mix in the melted margarine and half of the flour. Knead the dough for a short while.
4. Add the remaining flour and knead for 5-10 minutes until the dough is smooth.
5. Cover the bowl with the dough and let it rise for about one hour.
6. Roll out the dough to fit a baking sheet and transfer it with parchment paper onto the sheet.
7. In a large plastic bag, mix 1.5 dl sugar, potato starch, and grated lime zest.
8. Add the frozen blueberries to the bag and shake until the ingredients are well combined.
9. Pour the sweetened blueberries evenly over the dough.
10. Whisk the egg with water and brush the edges of the pie with the mixture.
11. Bake the pie on the lower rack of a preheated oven at 200°C (390°F) for about 30-35 minutes, until the top is nicely browned.
12. Allow the pie to cool before slicing. Finish with a dusting of powdered sugar if desired.
