Ingredients:
- 400 g pasta (e.g., spaghetti or fusilli) - 250 g cherry tomatoes
- 1 bell pepper (preferably red)
- 1 cucumber
- 150 g feta cheese
- 100 ml olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and rinse with cold water. 2. Cut the cherry tomatoes in half, dice the bell pepper, and slice the cucumber.
3. In a bowl, combine the cooked pasta, tomatoes, bell pepper, and cucumber.
4. Crumble the feta cheese over the pasta mixture.
5. In a separate bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
6. Pour the dressing over the pasta salad and mix well.
7. Garnish with fresh basil before serving.
