Ingredients

- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 2 garlic cloves
- 1 onion
- 500 ml vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)

Instructions

1. Chop all the bell peppers, onion, and garlic into small cubes.
2. Heat olive oil in a pot over medium heat. Add onion and garlic, and sauté until soft.
3. Add the chopped bell peppers to the pot and cook for about 5 minutes until they become tender.
4. Pour the vegetable broth into the pot and bring to a boil. Reduce the heat and let the soup simmer for about 15 minutes.
5. Blend the soup with an immersion blender or a regular blender until it is smooth and creamy.
6. Season with salt and pepper to taste. Serve warm and garnish with fresh herbs if desired.
