Serving Size: 6 people
Ingredients:
- 400 g chicken fillets - 200 g rice
- 1 liter chicken broth
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 2 garlic cloves
- 1 onion
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic. Dice the bell peppers and zucchini. 2. Heat the olive oil in a large skillet. Add the onion and garlic, and sauté over medium heat until they are soft.
3. Add the diced bell peppers and zucchini, and cook for a few minutes.
4. Add the chicken fillets and cook until they are done. Season with salt and pepper.
5. Stir in the rice and mix well. Pour the chicken broth over the rice and bring the mixture to a boil.
6. Cover with a lid and reduce the heat. Let it cook for about 20 minutes or until the rice is cooked and the liquid is absorbed.
7. Serve the lunch in portions and garnish with fresh parsley.
