A delightful Italian treat where zucchini flowers are fried crispy in olive oil. This dish offers a burst of flavor and is perfect as an appetizer or side dish. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl water
- 7 dl good quality Italian olive oil
- 500 g tomatoes
- 1 onion, finely chopped
- 1 tsp sugar
- 2 egg whites
- 4 anchovy fillets
- 1 garlic clove, crushed
- 300 g fresh zucchini flowers
- 1 dl dry Italian white wine
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a deep frying pan or pot over medium heat.
2. Chop the tomatoes and onion. Sauté the onion in the pan until soft.
3. Add the tomatoes and crushed garlic. Allow the mixture to simmer on low heat for about 10 minutes. Add sugar, salt, and pepper.
4. Lightly beat the egg whites in a separate bowl. Stir in the white wine.
5. Rinse the zucchini flowers and remove the stems. Dip the flowers first in the water mixture and then in the egg white mixture.
6. Fry the zucchini flowers in the hot olive oil until golden brown and crispy. Remove from oil and drain excess oil on paper towels.
7. Serve immediately while warm with the tomato filling on the side.
