Serving Size: 8 servings
Ingredients:
- 200 g crushed digestive biscuits - 100 g melted butter
- 400 g mascarpone cheese
- 200 g cream cheese
- 150 g sugar
- 2 tsp vanilla sugar
- 3 eggs
- 1 tbsp lemon juice
- 200 g berries (e.g., blueberries or raspberries)
Instructions:
1. Preheat the oven to 180°C (350°F). 2. Mix the crushed biscuits and melted butter well together. Press the mixture into the bottom and sides of a pie dish.
3. In a bowl, whisk together the mascarpone cheese, cream cheese, sugar, and vanilla sugar until smooth.
4. Add the eggs one at a time, whisking well after each addition. Stir in the lemon juice.
5. Pour the cheese mixture over the biscuit base and smooth the top.
6. Evenly sprinkle the berries over the filling.
7. Bake in the middle of the oven for about 40-50 minutes, until the top is beautifully golden brown and the filling is set.
8. Allow to cool at room temperature, then transfer to the refrigerator for at least 2 hours before serving.
