A delightful bear cake with a light sponge base, strawberry mousse filling, and beautiful frosting. Perfect for parties or birthdays! Preparation time: 1.5 hours
Serving size: 10-12 servings
Ingredients:
- Sponge Cake:- 4 dl all-purpose flour
- 2 dl sugar
- 2 tsp baking powder
- 1 dl milk
- 1 dl oil
- 3 eggs
- 1 tsp vanilla sugar
- Strawberry Mousse:
- 400 g fresh strawberries
- 2 dl heavy cream
- 2 tbsp sugar
- 2 gelatin sheets
- Frosting:
- 250 g vanilla cream
- 250 g Satin Ice fondant
- Decoration:
- Sugar pearls
- Cocktail stick
- Ruler
Instructions:
1. Prepare the sponge cake: In a bowl, mix the dry ingredients (flour, sugar, baking powder, vanilla sugar). Add the milk, oil, and eggs, and mix until smooth.2. Pour the batter into a greased cake pan and bake at 175°C (350°F) for about 25-30 minutes. Let it cool.
3. Make the strawberry mousse: Puree the strawberries and mix in the sugar. Soak the gelatin sheets in water and dissolve them in the strawberry puree. Fold in the whipped cream gently.
4. Cut the cooled sponge cake in half and fill one half with the strawberry mousse. Place the other half on top.
5. Spread a thin layer of vanilla cream over the top and sides of the cake. Roll out the Satin Ice fondant and cover the cake.
6. Use the ruler and cocktail stick to create a checkered pattern on the sides of the cake. Adhere sugar pearls at the intersections with the fondant.
7. Allow the cake to set before serving.
