This delicious and healthier blueberry spelt pancake is a perfect snack for the whole family. The spelt flour and coconut oil add flavor and nutrients, while the blueberries give it a refreshing touch.

Serving Size: 8-10 servings
Ingredients:
- 8 cups milk
- 3 eggs
- 4 cups spelt flour (semi-coarse whole grain)
- 1 teaspoon baking powder
- 0.5 cup cane sugar
- 2 teaspoons vanilla sugar
- A pinch of cardamom
- 0.5 cup coconut oil
- 4 cups blueberries
- 0.5 cup shredded coconut
- Liquid honey for drizzling
Instructions:
1. Pour the milk into a bowl and whisk in the eggs.
2. Add the spelt flour, baking powder, sugars, and cardamom, and mix well. Let it sit for about half an hour to swell.
3. Melt the coconut oil (if solid) and stir it into the batter.
4. Line a deep baking tray (approximately 30x40 cm) with parchment paper and pour the batter into the tray. Sprinkle the blueberries and shredded coconut on top.
5. Bake in the oven at 200°C (fan oven) for about 40 minutes. Keep an eye on the pancake, as oven temperatures may vary.
6. Remove the pancake from the oven and drizzle some liquid honey on top. Serve it immediately, warm or completely cooled. You can also serve it with vanilla sauce on the side.
