A refreshing and tangy jam made with rhubarb and fresh mint, perfect for spreading on pastries or toast.
Preparation Time: 30 minutes
Serving Size: Makes about 4 cups
Ingredients:
- 500 g rhubarb, chopped
- 250 g sugar
- 1 dl water
- 1 dl fresh mint, chopped
- 1 tsp lemon juice
- 1/2 tsp vanilla sugar
Instructions:
1. Rinse the rhubarb thoroughly and chop it into small pieces.
2. In a pot, combine the rhubarb, sugar, and water. Heat over medium heat until the sugar dissolves.
3. Allow the mixture to boil for about 10-15 minutes, until the rhubarb softens.
4. Stir in the chopped mint, lemon juice, and vanilla sugar. Mix well.
5. Cook for an additional 5-10 minutes, until the jam reaches your desired consistency.
6. Pour the jam into clean, heated jars and seal the lids.
7. Let it cool at room temperature before storing in the refrigerator.
