Strawberry Cake (Mansikkatorttu)

A delightful and refreshing strawberry cake, perfect for celebrations or summer days. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 4 eggs - 1 dl sugar
- 1 dl all-purpose flour
- 0.5 dl potato flour
- 1 tsp baking powder
- 0.5 dl water
- 2 tbsp lemon juice
- 2 tbsp sugar (for soaking)
- 200 g lemon curd
- 2 dl heavy cream
- 2 tbsp sugar (for filling)
- 1 tsp vanilla sugar
- 1 tbsp lemon juice (for filling)
- 200 g Greek yogurt
- 300 g fresh strawberries
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a round cake pan.2. Whisk the eggs and sugar together until light and fluffy.
3. In a separate bowl, mix the all-purpose flour, potato flour, and baking powder. Gently fold the flour mixture into the egg mixture.
4. Pour the batter into the prepared pan and bake for about 25-30 minutes, or until the top is golden brown and the cake is cooked through. Allow to cool.
5. For soaking, mix the water, lemon juice, and sugar together and chill in the refrigerator.
6. Prepare the filling by whipping the heavy cream, sugar, vanilla sugar, and lemon juice until soft peaks form. Gently fold in the Greek yogurt.
7. Slice the cooled cake in half. Soak the bottom layer with the lemon water.
8. Spread the lemon curd over the soaked cake layer, then add a layer of the yogurt-cream mixture.
9. Top the filling with fresh strawberries. Place the top cake layer on top.
10. Soak the top layer as well and cover the entire cake with the remaining yogurt-cream mixture. Decorate with fresh strawberries.
11. Allow the cake to set in the refrigerator for at least one hour before serving.
