Ingredients:
- 400 g Kunnon Lenkkimakkaraa - 300 g pasta (e.g., penne or fusilli)
- 2 tablespoons olive oil
- 1 onion
- 2 cloves garlic
- 1 bell pepper
- 200 g cherry tomatoes
- 150 g fresh spinach
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions:
1. Cook the pasta according to the package instructions. Drain and set aside. 2. Peel and chop the onion and garlic. Dice the bell pepper.
3. Heat the olive oil in a large frying pan over medium heat. Add the onion and garlic, sautéing for about 3-4 minutes.
4. Add the bell pepper to the pan and cook for a few more minutes.
5. Slice the Kunnon Lenkkimakkara and add it to the pan. Cook until the sausage is nicely browned.
6. Add the cherry tomatoes and cook until they start to soften.
7. Stir in the cooked pasta and fresh spinach. Mix well and cook for a few more minutes until the spinach is wilted.
8. Season with salt and pepper to taste.
9. Serve the dish topped with Parmesan cheese.
