Oat Crust Cake with Strawberries and Rhubarb

A delightful and easy-to-make cake featuring an oat crust and a delicious cream cheese filling with strawberries and rhubarb. Perfect for summer desserts! Preparation Time: 30 minutes (plus chilling time)
Serving Size: 8-10 servings
Ingredients:
- 200 g oat cookies- 100 g butter (melted)
- 200 g cream cheese
- 2 dl heavy cream
- 1 dl sugar
- 2 dl fresh strawberries (sliced)
- 2 dl rhubarb (chopped)
- 1 tsp vanilla sugar
Instructions:
1. Crush the oat cookies into fine crumbs and mix them with the melted butter.2. Press the oat mixture evenly into the bottom of a cake pan and place it in the refrigerator to set for about 15 minutes.
3. Meanwhile, prepare the filling: whip the heavy cream and then add the cream cheese, sugar, and vanilla sugar. Mix well.
4. Remove the oat crust from the refrigerator and spread the cream cheese filling evenly over the crust.
5. Top the filling with sliced strawberries and chopped rhubarb.
6. Allow the cake to chill in the refrigerator for at least 2 hours before serving to let the flavors meld.
