Lyttyperunapiirakka with Mushrooms

A savory Finnish pie made with mashed potatoes and sautéed mushrooms, perfect for a comforting meal. Preparation Time: 60 minutes
Serving Size: 6 servings
Ingredients:
- 500 g potatoes
- 200 g mushrooms (e.g., chanterelles or button mushrooms)
- 1 dl cream
- 1 onion
- 2 tbsp butter
- 1 dl grated cheese (optional)
- Salt and pepper to taste
- 1 tsp dried thyme (optional)
- 1 dl flour (potato flour or wheat flour)
Instructions:
1. Peel and boil the potatoes in salted water until soft. Drain and mash them.
2. Chop the onion and mushrooms. Sauté the onion and mushrooms in butter in a pan until cooked.
3. In a bowl, combine the mashed potatoes, mushroom mixture, cream, salt, pepper, and thyme. Mix well.
4. Add the flour to the mixture and stir until a smooth dough forms.
5. Grease a pie dish and pour the dough into it, smoothing the top.
6. Sprinkle grated cheese on top if desired.
7. Bake in a preheated oven at 200°C (390°F) for about 30-40 minutes, until the top is golden brown.
8. Let it cool for a moment before serving. Enjoy!
