This delightful vegetarian feast features a variety of dishes, perfect for celebrating the New Year with wholesome ingredients.
Ingredients:
- 2 Jerusalem artichokes
- 3 carrots
- 1 dl vegetable broth
- 1 dl cooking cream
- 200 g mushrooms (e.g., button mushrooms)
- 2 potatoes
- 1 dl Parmesan cheese
- 4 tomatoes
- 1 rye bread
- 200 g salmon
- 1 beetroot
- 100 g dark chocolate
- Coffee for serving
Instructions:
1. Peel the Jerusalem artichokes and carrots. Cut them into small pieces and boil in vegetable broth until soft.
2. Add the cream to the soup and blend until smooth. Season with salt and pepper.
3. For the mushroom salad, sauté chopped mushrooms in a pan with spices to taste.
4. Peel and grate the potatoes. Mix with Parmesan cheese and bake in the oven at 200°C (392°F) for about 30 minutes.
5. Prepare the tomato dashi by heating chopped tomatoes and seasoning with salt.
6. Slice the rye bread and lightly toast it.
7. For the salmon packets, wrap the salmon fillet in vegetables and bake in the oven at 180°C (356°F) for about 20 minutes.
8. Make the beetroot chocolate cake by melting the chocolate and mixing it with grated beetroot. Bake in the oven at 180°C (356°F) for about 40 minutes.
9. Serve all dishes together with a cup of coffee.
