A refreshing and delicious lemon pound cake, perfect for coffee breaks or as a sweet snack.

Ingredients

- 3 large eggs
- ½ cup sugar
- 2½ cups all-purpose flour
- 1 tsp baking powder
- 125 g butter or margarine
- ½ cup lemon juice
- 1 lemon (zest)
- ¼ cup water
- Breadcrumbs and butter or margarine for greasing the pan

Instructions

1. Grease and flour a cake pan with breadcrumbs and butter or margarine.
2. Wash the lemon thoroughly and zest the peel.
3. Beat the eggs and sugar together until fluffy.
4. Melt the butter or margarine and add it to the egg-sugar mixture.
5. Stir in the lemon juice, lemon zest, and water.
6. Combine the flour and baking powder, then gently fold into the batter.
7. Pour the batter into the prepared cake pan.
8. Bake in a preheated oven at 175°C (350°F) for about 30-40 minutes, until the cake is golden brown and cooked through.
9. Allow to cool before serving.
