A strawberry-flavored gluten-free birthday cake topped with a soft meringue frosting. Perfect for celebrations!

Serving Size: 8-10 servings

Ingredients:

- 200 g gluten-free flour blend
- 150 g sugar
- 100 g butter
- 3 eggs
- 1 tsp vanilla sugar
- 200 g fresh strawberries
- 1 dl cream
- 3 egg whites
- 200 g sugar syrup (cooked to 121 degrees Celsius)

Instructions:

1. Prepare the gluten-free base: Beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well. Stir in the gluten-free flour blend and vanilla sugar.
2. Pour the batter into a greased and floured cake pan. Bake at 175 degrees Celsius for about 25-30 minutes or until the cake is cooked through. Allow to cool.
3. Prepare the strawberry filling: Chop the strawberries and mix them into the whipped cream. Spread the filling over the cooled cake.
4. Make the meringue frosting: Whip the egg whites until stiff peaks form. Heat the sugar syrup until it reaches 121 degrees Celsius. Slowly pour the syrup into the egg white mixture while whisking until it cools and becomes glossy.
5. Pipe the meringue onto the cake for decoration.
6. Optionally, decorate with flowers.
