Naked Cake with Apple Jam and Vanilla Mousse

Ingredients:
- 5 eggs
- 1.5 dl sugar
- 2.5 dl all-purpose flour
- 1 tsp baking powder
- 1 dl apple jam
Vanilla Mousse:
- 2.5 dl whipping cream
- 200 g cream cheese
- 4 tsp vanilla sugar
- 4 tbsp sugar
- 0.5 tsp vanilla powder
- 1 tsp gelatin powder
- 2 tbsp water
Instructions:
1. Prepare the Cake Base:
- Preheat the oven to 175°C (350°F).
- Whisk the eggs and sugar until light and fluffy.
- In a separate bowl, combine the flour and baking powder, then gently fold into the egg mixture.
- Pour the batter into a greased and floured cake pan.
- Bake in the oven for about 25-30 minutes, or until a toothpick comes out clean. Allow to cool.
2. Make the Vanilla Mousse:
- Whip the cream until soft peaks form.
- Mix the gelatin powder with water and let it bloom. Heat in the microwave for about 10-15 seconds until dissolved.
- In a bowl, combine the whipped cream with cream cheese, sugar, and vanilla powder.
- Gradually add the gelatin mixture while stirring continuously.
3. Assemble the Cake:
- Slice the cooled cake into three layers.
- Place the first layer on a serving plate and spread apple jam on top, followed by a layer of vanilla mousse.
- Repeat the layers until all components are used.
- Optionally, decorate the top with additional vanilla mousse and fresh fruits.
4. Chill the Cake:
- Refrigerate the assembled cake for at least a couple of hours before serving. Enjoy!
