A delicious and soft cake that combines sweet and tart flavors, perfect for Midsummer or summer celebrations. Preparation Time: 1.5 hours
Serving Size: 8-10 servings
Ingredients:
- 1 cup all-purpose flour - 1/2 cup whole wheat flour
- 1 teaspoon vanilla sugar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 2/3 cup dark (brown) sugar
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 2 cups chopped rhubarb
- 1-2 teaspoons vanilla sugar (for rhubarb seasoning)
- Icing: powdered sugar + water
Instructions:
1. Preheat the oven to 175°C (350°F) and grease or line a loaf pan with parchment paper. 2. In a bowl, combine all-purpose flour, whole wheat flour, vanilla sugar, baking soda, and salt.
3. In another bowl, whisk together the egg, dark sugar, buttermilk, and vegetable oil.
4. Prepare the rhubarb by chopping it into small pieces and seasoning with vanilla sugar.
5. Gently mix the dry and wet ingredients together. Finally, fold in the rhubarb pieces.
6. Pour the batter into the greased loaf pan and bake for about 60-75 minutes or until the cake is cooked through (check with a toothpick).
7. Allow the cake to cool before serving. Optionally, decorate the cake with icing made from powdered sugar and water.
