A delicious carrot cake made from simple ingredients, perfect for a coffee gathering.

Ingredients:
- Cake Batter:
- 3 eggs
- 1 1/4 cups sugar
- 2 1/2 cups all-purpose flour
- 1/2 cup oat bran
- 3 teaspoons baking powder
- 2 teaspoons vanilla sugar
- 2 teaspoons ground cinnamon
- 3 cups finely grated carrots
- 7 ounces margarine or butter (melted)
- Frosting:
- 5 ounces margarine
- 5 ounces plain cream cheese
- 2 teaspoons vanilla sugar
- 1 3/4 cups powdered sugar
- Additional:
- Chopped almonds
- Maple syrup
- Berries
Instructions:
1. Whisk the eggs and sugar until fluffy.
2. In a separate bowl, mix the flour, oat bran, baking powder, vanilla sugar, and ground cinnamon.
3. Grate the carrots finely.
4. Fold the dry ingredients and grated carrots into the egg mixture.
5. Finally, add the melted margarine or butter and mix until smooth.
6. Grease and flour a cake pan.
7. Pour the batter into the pan and bake in a preheated oven at 375°F (190°C) for about 40 minutes.
8. Allow the cake to cool.
9. For the frosting, beat together the margarine and cream cheese, then add the vanilla sugar and powdered sugar, mixing well.
10. Spread the frosting over the cooled cake, sprinkle with chopped almonds, and decorate with berries.
11. Drizzle with a little maple syrup on top.
