A delicious and sophisticated fish dish that delights the taste buds with its diverse flavors. This fish loaf is perfect as a side or main course. Preparation Time: 2 hours
Serving Size: 4-6
Ingredients:
- 300 g pike fillets - 2 eggs
- 2 dl heavy cream
- A pinch of white pepper
- A pinch of sugar
- Just over 1/2 tsp salt
- Butter for greasing the baking dish
- Breadcrumbs for dusting (or parchment paper for lining the dish)
Instructions:
1. Remove the bones from the pike and chop the fillets into pieces. 2. Grind the fish pieces in a food processor until there are no bone fragments left.
3. Cut the crusts off the bread and mix 25 g of the bread crumb with 2 dl of cream.
4. Separate the egg yolks from the whites and add the yolks to the fish mixture.
5. Whip the egg whites until soft peaks form and gently fold them into the fish mixture.
6. Add the cream-bread mixture along with the seasonings (salt, sugar, white pepper) to the fish mixture and mix well.
7. Grease a baking dish with butter and dust it with breadcrumbs (or line it with parchment paper).
8. Pour the fish mixture into the dish and bake in a water bath at 175°C (347°F) for about an hour.
9. Allow the loaf to cool slightly before inverting it onto a serving platter. Serve with caper sauce if desired.
