A delicious Finnish rice casserole with fish and spinach.
Preparation Time: 15 minutes
Cooking Time: 40-50 minutes
Serving Size: 6 servings
Ingredients:
- 1 onion, chopped
- 1 bunch of dill, chopped
- 3 dl frozen spinach
- 1 tsp salt
- 2.5 dl rice and rye mix
- 6 dl skim milk
- 2 eggs
- 400 g frozen or fresh fish, cut into pieces
- 0.25 tsp white pepper
Instructions:
1. Grease a baking dish.
2. Add the chopped onion to the dish.
3. Layer the rice and rye mix on top, followed by the fish pieces.
4. Add the frozen spinach, salt, and white pepper.
5. In a bowl, crack the eggs and whisk them together. Add the milk and mix well.
6. Pour the egg and milk mixture over the other ingredients in the dish.
7. Gently stir all the ingredients together.
8. Bake in a preheated oven at 200°C (392°F) for about 40-50 minutes, until the top is golden brown.
9. Allow to cool slightly before serving.
