Yogurt Cake (Jugurttikakku)

A delicious, moist yogurt cake that is easy and quick to make. Perfect for coffee breaks or as a dessert. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 3 eggs- 1.5 dl plain yogurt
- 3 dl sugar
- 1.5 dl neutral oil
- Zest of half a lemon
- 1.5 dl potato flour
- 2.5 dl all-purpose flour
Instructions:
1. Preheat the oven to 180°C (350°F). Grease a ring cake pan.2. Separate the eggs into yolks and whites.
3. In the bowl with the yolks, add the yogurt and sugar, and whisk until smooth and fluffy.
4. Gradually pour in the oil while whisking continuously. Add the lemon zest.
5. First, add the all-purpose flour and then the potato flour, and mix well.
6. In a separate bowl, whip the egg whites until stiff peaks form, then gently fold them into the batter.
7. Pour the batter into the prepared pan and bake in the oven for about 30 minutes.
8. Allow the cake to cool in the pan for a few minutes to let the edges loosen, then invert onto a cooling rack.
9. Dust the cake with powdered sugar before serving.
