A delightful and refreshing salad perfect for any occasion.

Serving Size: 4 servings
Ingredients:
- 100 g feta cheese
- Extra virgin olive oil (herb-infused)
- 4-5 cloves garlic (chopped)
- 1 large bell pepper
- 1 small leek (or half of a larger one)
- 1 Chinese cabbage
- 1 can kidney beans (drained)
- Mediterranean herb mix
- A generous amount of green olives
Instructions:
1. Thinly slice or chop the Chinese cabbage, leek, bell pepper, and garlic.
2. Combine all the ingredients in a large bowl.
3. Add the drained kidney beans and green olives to the mix.
4. Cube the feta cheese and add it to the salad.
5. Drizzle with herb-infused extra virgin olive oil and sprinkle with Mediterranean herb mix to taste.
6. Toss all the ingredients together well and serve immediately.
