Serving Size: 6-8 servings
Ingredients:
- 500 g chicken fillets
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika powder
- 200 g fresh vegetables (e.g. bell peppers, zucchini, carrots)
- 150 g feta cheese
- 1 dl fresh basil
- 1/2 dl balsamic vinegar
Instructions:
1. Heat olive oil in a frying pan over medium heat.
2. Season the chicken fillets with salt, black pepper, garlic powder, and paprika powder.
3. Cook the chicken fillets in the pan for about 6-7 minutes on each side until cooked through.
4. Slice the vegetables and add them to the pan with the chicken. Cook for an additional 5 minutes until the vegetables soften.
5. Crumble feta cheese on top of the mixture and add chopped basil.
6. Drizzle balsamic vinegar over the dish and gently stir to combine.
7. Serve warm, preferably with rice or salad.
