Ingredients:

- 4 quail eggs
- 100 g fresh spinach
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper to taste
- 1 tablespoon almond flakes (for garnish)

Instructions:

1. Boil the quail eggs in boiling water for about 3-4 minutes until the yolk is still slightly runny. Cool the eggs in cold water and carefully peel them.
2. Rinse the fresh spinach and dry it. In a bowl, mix the spinach with olive oil and lemon juice until the spinach is wilted.
3. Prepare the spinach dust: Add the spinach to a blender and blend until it becomes a fine powder.
4. Place the boiled quail eggs on a plate and sprinkle the spinach dust on top.
5. Season with salt and black pepper to taste. Garnish with almond flakes before serving.
