Ingredients:
- 4 organic veal shanks
- 2 garlic cloves, crushed
- 1 onion, chopped
- 2-3 carrots, diced
- 1 celery stalk, chopped
- 1 cup dry white wine
- 4 cups beef broth
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add crushed garlic and onion, sauté until the onion is soft.
2. Add the veal shanks to the skillet and brown them evenly on all sides.
3. Add the diced carrots and celery to the skillet, and sauté for a few more minutes.
4. Pour in the white wine and bring to a boil to allow the alcohol to evaporate.
5. Add the beef broth, rosemary, and thyme. Season with salt and pepper.
6. Cover the skillet with a lid and reduce the heat. Let the shanks simmer gently for about 1.5 hours, until the meat is tender and easily pulls away from the bone.
7. Serve osso buco with risotto or polenta.
