Ingredients:

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 celery stalk, diced
- 1 can (400 g) crushed tomatoes
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 100 ml peas (frozen)
- 100 ml milk or plant-based milk (optional)

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes until they are soft.
2. Add the diced carrots, potatoes, and celery, and cook for another 5 minutes.
3. Pour in the crushed tomatoes and vegetable broth. Add thyme, salt, and black pepper. Stir well.
4. Let the soup simmer on low heat for about 15-20 minutes until the vegetables are tender.
5. Stir in the peas and milk (if using), and heat the soup for a few more minutes.
6. Serve hot and enjoy your winter hiking soup!
