Ingredients:
- 300 g grated carrots
- 200 g sugar
- 150 ml oil
- 3 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 100 g chopped nuts (e.g., walnuts)
- 100 g raisins
- 200 g cream cheese
- 100 g softened butter
- 200 g powdered sugar
- 1 tsp vanilla extract
- Sugar lace for decoration
- Silver paint
Instructions:
1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
2. In a bowl, mix together the grated carrots, sugar, oil, and eggs.
3. Add the flour, baking powder, baking soda, cinnamon, and salt to the mixture. Stir until well combined.
4. Fold in the nuts and raisins.
5. Pour the batter into the prepared pan and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
6. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
7. For the frosting, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth.
8. Once the cake is completely cooled, spread the frosting over the top.
9. Decorate with sugar lace and apply silver paint to the lace for a shimmering effect.
