A delicious and creamy baked cauliflower dish that's perfect as a side or main course.

Ingredients:
- 1 cauliflower (white or colorful)
- 2 cups milk (or plant-based milk for a vegan version)
- 2 tablespoons butter (or margarine for a vegan version)
- 2 tablespoons flour (or gluten-free flour)
- 2 cups grated cheese (or vegan cheese)
- Salt and pepper to taste
- 1 teaspoon nutmeg (optional)
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Wash and chop the cauliflower into small pieces. Boil them in salted water for about 5 minutes until slightly softened. Drain well.
3. In a saucepan over medium heat, melt the butter. Add the flour and mix well. Cook the mixture for about a minute.
4. Gradually add the milk (or plant-based milk) while stirring, until the sauce thickens. Season with salt, pepper, and nutmeg.
5. Remove the saucepan from heat and stir in the grated cheese (or vegan cheese) until melted.
6. Place the cauliflower pieces in a baking dish and pour the cheese sauce over them.
7. Bake in the oven for about 20-25 minutes, until the top is golden brown and bubbling.
8. Let it cool for a moment before serving. Enjoy!
