A sweet and spicy condiment that complements many dishes, especially grilled foods and sandwiches. Preparation Time: 30 minutes
Serving Size: About 500 ml
Ingredients:
- 250 g canned peaches
- 2 bananas
- 1 onion
- 2 garlic cloves
- 100 ml white wine vinegar
- 100 ml red wine vinegar
- 100 ml sugar
- 1½ tsp salt
- 1 tsp black pepper
- ½ tsp chili powder (optional)
Instructions:
1. Start by peeling and chopping the onion and garlic cloves.
2. Heat a pot over medium heat and add the onion and garlic. Sauté until soft.
3. Add the canned peaches (with juice), chopped bananas, white wine vinegar, red wine vinegar, sugar, salt, black pepper, and chili powder to the pot.
4. Stir well and heat the mixture until it begins to boil.
5. Reduce the heat and let the mixture simmer on low for about 15-20 minutes, until thickened.
6. Remove the pot from the heat and let it cool slightly.
7. Blend the mixture until smooth using a blender or immersion blender if desired.
8. Pour the finished ketchup into clean, sterilized jars and store in the refrigerator.
