A refreshing and delicious ice cream pop made from blended fruits and coconut milk. Perfect for a cool treat on hot summer days. Preparation Time: 10 minutes + freezing
Serving Size: 6-8 pops
Ingredients:
- 2 nectarines
- 1 cup strawberries
- 1 banana
- 1 orange
- 1 cup coconut milk
- 1-2 tablespoons stevia (to taste)
- (optional: blackcurrants, dates, coffee, or vanilla)
Instructions:
1. Blend the nectarines, strawberries, and banana in a blender until smooth.
2. Add the coconut milk and stevia, and blend again until combined.
3. Pour the mixture into ice pop molds and insert sticks.
4. Freeze the pops in the freezer for at least 4-6 hours or until completely solid.
5. Remove the ice cream pops from the molds and enjoy!
