Serving Size: 10-12 servings
Ingredients:
- 4 dl all-purpose flour - 2 dl sugar
- 1 dl milk
- 100 g butter
- 3 eggs
- 2 tsp baking powder
- 1 tsp vanilla sugar
Strawberry Mousse:
- 300 g fresh strawberries
- 2 dl whipping cream
- 1 dl sugar
- 2 gelatin sheets
Frosting and Decorations:
- 250 g white fondant
- Gel food coloring (blue and pink)
Instructions:
1. Prepare the cake base: Cream the butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. 2. In a separate bowl, combine the dry ingredients (flour, baking powder, and vanilla sugar). Gradually add the dry mixture and milk to the batter, mixing until smooth.
3. Pour the batter into a greased cake pan and bake at 175°C (350°F) for about 30-35 minutes, or until a toothpick comes out clean. Allow to cool.
4. Prepare the strawberry mousse: Soak the gelatin sheets in cold water. Puree the strawberries and mix with sugar. Fold in the whipped cream.
5. Heat a small portion of the strawberry puree and dissolve the gelatin sheets in it. Combine the gelatin mixture with the strawberry puree and mix well.
6. Slice the cooled cake in half and fill with the strawberry mousse. Place the top layer back on.
7. Roll out the fondant and cover the cake. You can marble the fondant for a fun design.
8. Let the cake set in the refrigerator before serving.
