Ingredients:
- 2 perch fillets - 1 medium fennel bulb
- 200 g fresh spinach
- 2 tablespoons olive oil
- 1 lemon (juice and zest)
- Salt and pepper to taste
- Fresh dill (optional)
Instructions:
1. Heat the olive oil in a pan over medium heat. 2. Slice the fennel into thin strips and add it to the pan. Sauté the fennel for about 5 minutes until it softens.
3. Add the fresh spinach to the pan and stir until the spinach wilts.
4. Season the mixture with salt, pepper, and lemon juice.
5. Push the fennel-spinach mixture to one side of the pan and add the perch fillets. Cook the fillets for about 3-4 minutes on each side until they are cooked through and golden brown.
6. Grate lemon zest over the fillets before serving and garnish with fresh dill if desired.
7. Serve immediately while warm.
