A delicious dish inspired by the Finnish Bocuse d'Or qualifiers, showcasing French cuisine and seasonal ingredients. Preparation Time: 1 hour
Serving Size: 4 people
Ingredients:
- 500 g chicken fillet - 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lemon
- 3 cloves garlic, crushed
- 200 g green beans
- 150 g cherry tomatoes
- 1 dl fresh basil
- 50 g parmesan cheese, grated
Instructions:
1. Heat the olive oil in a frying pan over medium heat. 2. Season the chicken fillets with salt and black pepper, and cook them in the pan for about 5-7 minutes on each side until golden brown and cooked through.
3. Add the crushed garlic to the pan and sauté for an additional minute.
4. Squeeze the lemon juice over the chicken fillets and mix well.
5. Boil the green beans in salted water for about 3-4 minutes until crisp. Drain and add to the pan with the chicken.
6. Add the cherry tomatoes and gently mix all the ingredients together.
7. Serve the portions on plates, garnished with fresh basil and grated Parmesan cheese.
