This pasta dish is tasty and fairly easy to prepare. It appeals to both kids and adults! Preparation time is just 30 minutes, and the recipe serves four.
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large pan over medium heat. Add the onion and garlic, sauté for about 3 minutes.
3. Add the bell pepper and cherry tomatoes to the pan, and cook for another 5 minutes until the vegetables soften.
4. Stir in the spinach and mix until it wilts. Season with salt and pepper.
5. Combine the cooked pasta with the vegetables in the pan. Add a little reserved cooking water if needed to keep the mixture moist.
6. Mix in the grated Parmesan cheese and serve immediately. Garnish with fresh basil.
