A delicious Spanish dessert, Crema Catalana is often served with refreshing orange sorbet or ice cream, perfect for celebrations or a sweet treat any day. Preparation Time: 30 min + chilling time
Serving Size: 4 servings
Ingredients:
- 500 ml milk - 100 ml cream
- 100 g sugar
- 1 cinnamon stick
- Zest of 1 lemon
- 4 egg yolks
- 30 g cornstarch
- 50 g sugar (for topping)
Instructions:
1. In a saucepan, combine the milk and cream. Add sugar, cinnamon stick, and lemon zest. Heat over medium until it starts to steam. Remove from heat and let it cool for 10-15 minutes.2. In a bowl, whisk together the egg yolks and cornstarch.
3. Remove the cinnamon stick and lemon zest from the milk mixture. Gradually pour the milk-cream mixture into the egg yolk mixture while stirring continuously.
4. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and begins to boil. Do not let it boil vigorously.
5. Pour the thickened mixture into serving dishes and let it cool at room temperature. Then refrigerate for at least 2 hours.
6. Just before serving, sprinkle sugar on top and caramelize it with a kitchen torch or under the broiler until the sugar is golden brown.
Serve the Crema Catalana with orange sorbet or ice cream.
