A delicious Spanish dessert that combines cream, milk, and spices, served with a caramelized sugar topping.
Preparation Time: 30 minutes + cooling time
Serving Size: 2 servings

Ingredients:

- 100 g sugar
- 2 egg yolks
- 1/2 tablespoon cornstarch
- 1/2 cinnamon stick
- 1 tablespoon lemon zest
- 100 ml heavy cream
- 100 ml milk
- For Topping:
- Generous tablespoon of sugar
- 1/4 teaspoon cinnamon

Instructions:

1. In a thick-bottomed pot, whisk together the egg yolks and sugar until well combined.
2. Add the cornstarch, cinnamon stick, and lemon zest. Mix well.
3. Pour in the cream and milk, stirring to combine.
4. Heat the mixture over medium heat, stirring constantly until it begins to thicken. Remove from heat.
5. Allow the cinnamon stick to infuse the custard for a few minutes before removing it.
6. Divide the custard into serving dishes and refrigerate to cool.
7. Combine the cinnamon and sugar in a small bowl. Sprinkle this mixture over the cooled custards.
8. Use a kitchen torch or broil in the oven until the sugar melts and turns a beautiful brown.
