Preparation Time: 30 minutes + chilling time
Serving Size: 4-6 servings
Ingredients:
- 500 ml milk
- 100 g sugar
- 4 egg yolks
- 30 g cornstarch
- 1 cinnamon stick
- Zest of 1 lemon
- 1 tsp vanilla sugar
- Sugar for caramelizing on top
Instructions:
1. Pour the milk into a saucepan and add the cinnamon stick, lemon zest, and vanilla sugar. Heat the mixture until it is almost boiling, then let it cool slightly.
2. In a bowl, whisk the egg yolks and sugar together until light and fluffy.
3. Mix in the cornstarch, then gradually pour the warm milk mixture into the egg yolk mixture while stirring continuously.
4. Return the mixture to the saucepan and heat over low heat, stirring constantly until it thickens.
5. Remove the saucepan from the heat and strain the mixture into a bowl. Cover with plastic wrap and allow to cool to room temperature.
6. Divide the mixture into serving dishes and refrigerate for at least 2 hours.
7. Before serving, sprinkle sugar on top and caramelize it using a hot grill or a torch until the sugar melts and turns a beautiful golden brown.
