Description: A traditional Provençal fish stew made with various seafood and fragrant herbs.
Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 2 onions
- 1 fennel bulb
- 2 cloves of garlic
- 250 g leek
- 2 carrots
- 100 ml olive oil
- 2 tsp fennel seeds
- 2 star anise
- 0.5 tsp saffron
- 400 ml white wine
- 100 ml tomato paste
- 1 liter fish stock
- About 400 g blue mussels
- 1 bunch of basil
- Zest of 1 orange
- 300 g white fish (e.g., pike, perch, or zander)
- 100 g shrimp tails (large)
- Salt
- Black pepper
Instructions:
1. Chop the onions and garlic. Cube the fennel, leek, and carrots.
2. Sauté the vegetables in olive oil in a large pot.
3. Add fennel seeds, star anise, saffron, and white wine. Bring to a boil.
4. Stir in the tomato paste and fish stock. Simmer on low heat for about 30 minutes.
5. Clean the blue mussels. Chop the basil and zest the orange.
6. Add the white fish, mussels, shrimp tails, and basil to the pot.
7. Season with orange zest, black pepper, and salt.
8. Serve the bouillabaisse with toasted bread and rouille on the side.

Description: A flavorful garlic and saffron mayonnaise served with bouillabaisse.
Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 2 slices of crusty bread
- 100 ml bouillabaisse broth (cold)
- 1 egg yolk
- 2 tsp Dijon mustard
- 2 cloves of garlic
- 200 ml olive oil
- 1 tbsp lemon juice
- A few drops of Tabasco
- Salt
Instructions:
1. Remove the crust from the bread and tear it into pieces in a bowl.
2. Add the cold bouillabaisse broth, egg yolk, mustard, and crushed garlic. Blend until smooth.
3. Gradually drizzle in the olive oil while continuously whisking.
4. Season the rouille with lemon juice, Tabasco, and salt.
5. Pour the rouille over the bouillabaisse before serving and stir to combine.
