A delicious layered cake with cloudberry jam and white chocolate mousse Preparation time: 1 hour
Serving size: 10-12 servings
Ingredients:
- 8 eggs - 2 dl sugar
- 2 dl all-purpose flour
- 1 dl cocoa powder
- 1 tsp baking powder
- 1 dl cloudberry jam
- 3 dl white chocolate
- 2 dl heavy cream
- Marzipan (for frosting and decoration)
- Food coloring (turquoise)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan. 2. In a bowl, whisk the eggs and sugar together until light and fluffy.
3. In another bowl, combine the flour, cocoa powder, and baking powder. Gradually fold this dry mixture into the egg mixture.
4. Pour the batter into the prepared cake pan and bake in the oven for about 30-35 minutes. Allow it to cool.
5. For the white chocolate mousse, melt the white chocolate and mix it with the heavy cream until smooth.
6. Cut the cooled cake into three layers. Moisten each layer as desired, then spread cloudberry jam and white chocolate mousse between each layer.
7. Frost the cake with marzipan and decorate as you wish (e.g., with ribbons).
8. Apply turquoise food coloring to the marzipan and shape the decorations.
9. Let the cake chill in the refrigerator before serving.
