Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh spinach
- 100 g sun-dried tomatoes (in oil)
- 200 ml heavy cream
- 100 g grated Parmesan cheese
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little pasta water.
2. Peel and finely chop the garlic cloves.
3. Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for about one minute.
4. Add the sun-dried tomatoes and cook for another 2-3 minutes.
5. Add the spinach to the skillet and cook until wilted.
6. Pour the cream into the skillet and mix well. Let it simmer for a few minutes.
7. Add the cooked pasta to the skillet and stir. If the mixture is too thick, add some reserved pasta water.
8. Stir in the Parmesan cheese and season with salt and black pepper.
9. Serve immediately and enjoy!
