A delicious mushroom pasta perfect for autumn, showcasing the flavors of the forest. Preparation time is about 30 minutes, and serves 4.
Ingredients:
- 300 g fresh porcini mushrooms
- 250 g pasta (e.g., spaghetti)
- 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 100 ml cream
- 50 g Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Finely chop the onion and garlic. Cube the mushrooms.
3. Heat the olive oil in a pan and sauté the onion and garlic until soft.
4. Add the mushroom cubes to the pan and fry until they are golden brown.
5. Pour the cream into the pan and mix well. Let it simmer on low heat for a few minutes.
6. Combine the cooked pasta with the mushroom sauce. Add some reserved cooking water if needed for a pleasant consistency.
7. Grate Parmesan cheese over the pasta and season with salt and pepper.
8. Garnish with fresh parsley before serving.
