Ingredients:

- 500 g potatoes
- 1 onion
- 2 garlic cloves
- 200 g carrots
- 1 red bell pepper
- 150 g green beans
- 2 dl vegetable broth
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh herbs (such as parsley or thyme)

Instructions:

1. Peel and chop the potatoes, carrots, and onion. Mince the garlic and chop the bell pepper.
2. Heat the olive oil in a large skillet or pot over medium heat.
3. Add the onion and garlic, and sauté for about 3 minutes until the onion is soft.
4. Add the potatoes and carrots, and cook for another 5 minutes.
5. Stir in the bell pepper and green beans, mixing well.
6. Pour in the vegetable broth and season with salt and black pepper.
7. Let it simmer on low heat for about 15-20 minutes until all the vegetables are tender.
8. Garnish with fresh herbs before serving.
