Ingredients:
- 2 eggs
- 1 avocado
- 2 slices of whole grain bread
- 1 tomato
- Salt to taste
- Pepper to taste
- Fresh basil or parsley for garnish
- Olive oil
Instructions:
1. Boil the eggs to your desired level of doneness.
2. Lightly toast the whole grain bread slices.
3. Cut the avocado in half, remove the pit, and mash the flesh with a fork. Season with salt and pepper.
4. Slice the tomato.
5. Spread the mashed avocado on the toasted bread slices.
6. Top with sliced tomato and the boiled eggs.
7. Garnish with fresh herbs and drizzle a little olive oil on top.
